Rocky's Street Corn
Ingredients
2 tablespoons butter
4 cups frozen corn
1/4 cup mayonnaise
1/4 cup sour cream (use Cacique Crema Mexicana)
juice of 1 lime
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 cup Cacique Cotija Cheese
(Chopped Cilantro on the side)

Cooking Instructions
1. Melt butter in a skillet over medium-high heat. Stir in frozen corn. Cook just until corn is heated through, stirring often.
2. Stir in mayonnaise, sour cream, lime juice, cumin and chili powder.
3. Add half of cotija cheese, stirring until melted.
4. Sprinkle the top with remaining cheese.
Garnish with tajin and/or cilantro.
