Apple-Gouda Quesadilla

Ingredients

2 tablespoons olive oil
8 (8 inch) flour tortillas
2 tbs Dijon mustard
2 green onions, thinly sliced (1/3 cup)
1 large red apple, cored, quartered and thinly sliced crosswise (2 cups)
4 cups shredded Gouda cheese (16oz)

Cooking Instructions

Preheat an outdoor grill to high heat (450° to 650°) and lightly oil grate. Or to cook on stovetop, brush a skillet with oil and heat over medium heat.

Lightly brush some oil on 1 side of 4 tortillas and arrange, oiled sides down, on a work surface. Spread 1/2 tbs mustard one each tortilla and scatter 1/4 green onions, 1/4 apple and 1 cup cheese on each. Top with remaining tortillas and brush with oil.

Put quesadillas on grill or in heated skillet. Cook until underside are crisp, about 3 minutes. Carefully flip with a wide metal spatula and cook until other side is crisp. 2 to 3 minutes more.
