V's Veggie medley
Ingredients
1 lb. bag of frozen vegetables (California Blend) thawed and drained
One can Campbell's Cream of Mushroom Soup
1/3 cup sour cream
1/4 teaspoon Black Pepper
1 cup shredded Swiss Cheese
French's Crispy Fried Onions

Cooking Instructions
Preheat oven to 400°
Mix mushroom soup, sour cream and black pepper. Add veggies and stir. Cover with foil and bake about an hour, check it at 45 minutes. It should be bubbling, if not it will be cold in the center. Try a carrot for tenderness. When you think it is good, add a layer of Swiss cheese and the fried onions. Place on the top rack, uncovered, and bake for an additional 5-10 minutes until golden brown.
