Eileen's Mushroom Artichoke Frittata
Ingredients
1 package baby portabello mushrooms
one clove garlic
6 eggs (whisked)
1 can artichoke hearts

Cooking Instructions
Slice mushrooms
Mince garlic cloves
Drain and chop 1 can artichoke hearts
Whisk 6 eggs together
Saute mushrooms and garlic together
On medium heat, spray a saute span with Pam, add eggs, mushrooms mixture and artichoke hearts. Cook, not stirring at all, until set about 6 minutes. Remove from heat. Sprinkle with some cheddar cheese and finish off in oven on broil for 2 minutes.
